Don’t you love baking cakes that are simple and uncomplicated?
I love those cakes that mix up in one bowl, with few ingredients, bake in one pan, require no frosting, involve very little clean up, AND taste amazing! This is one of those cakes. This will require the use of your blender, however. Because you will need to pulverize the 2 oranges that will flavor this cake. That’s right! 2 WHOLE ORANGES!
Oranges, eggs, almond meal, sugar and baking powder. It doesn’t get any easier than that.
It all begins when your two prettiest oranges take a dip in the hot tub.
They are cooled for a bit, cut into quarters and then every bit of the oranges are blended to form a pulp.
The pulp is combined with the other ingredients and baked in one round pan. What do you see when you look at this batter? I see almonds and oranges!
Once the cake is cooled, a little dusting of powdered sugar is all you need.
Cut a slice, grab your tea or coffee, kick up your feet and enjoy!
Remember, the flavor is dependent on the oranges you use. So make sure they are sweet!
YIELDS: one 9 inch cake
INGREDIENTS:
- 2 large oranges
- 5 large eggs
- 1 cup of almond meal
- 1 cup of granulated sugar
- 1 teaspoon of baking powder
- confectioners sugar for dusting
DIRECTIONS:
- Lightly grease a 9 inch springform pan and line the bottom with parchment paper.
- Wash the oranges under warm water with a soft bristle brush to remove any of the wax coating. Place the oranges in a saucepan and cover them with water. Boil the oranges for an hour. Then remove them from the heat and let them cool.
- Preheat your oven to 350°F.
- Place the oranges on a plate and cut them into quarters. Remove any seeds. Blend the oranges, skin and all, and any juices on the plate in your blender or food processor until they form a pulp. (There should be approximately 2 cups of pulp).
- Beat the eggs in a large bowl until they are light and fluffy. Add the orange pulp, almond meal, sugar and baking powder to the bowl and mix thoroughly.
- Pour the batter into the springform pan and bake for 50-60 minutes, or until the cake is golden and firm to the touch. A toothpick in the center should come out clean.
- Cool the cake in the pan before releasing the rim. And then allow the cake to cool completely on a wire rack before dusting with powdered sugar.
